Seville is the heart of Andalusia. Its historic centre, one of the largest in Europe, houses the Cathedral and the Giralda, the Alcázar and the Archive of the Indies, all declared World Heritage Sites. The Plaza de España, built for the 1929 Ibero-American Exhibition, is one of the most beautiful spaces on the continent. The Triana quarter, birthplace of flamenco, and Santa Cruz, the old Jewish quarter, are essential. Do not leave without trying the local gastronomy: salmorejo, spinach with chickpeas, fried fish and, of course, tapas at any bar. In spring, the city is transformed by the April Fair and Holy Week.
